These are two simple (and healthy) chicken dinner recipes with an Asian/stirfry twist. I use organic and healthy ingredients and as fresh as possible- that's what makes it taste the best. I also use a wok to cook them in and I beleive this makes stirfrys cook more evenly- and quicker!

1. Tangy Chicken Broccoli Stirfry
This sauce mixture that goes into this dish is so delicious and unique- it's almost addictive. This recipe is a slightly altered version of a recipe I discovered in a Sunset magazine http://www.sunset.com/food-wine/ (for more great recipes). This recipe serves 4.
3 tbsp peanut oil
2 chicken breasts
2 cups fresh cut broccoli florets
2 chopped roma tomatoes or other desired veggies, sometimes I use cabbage (optional)
3 cloves diced garlic
1 tsp fresh grated ginger
Sauce mixture recipe below: Mix seperately in a bowl
2 cups tomato-veg juice (I use Knudsen's Very Veggie)
3 tbsp soy sauce
1 1/2 tsp fresh grated ginger
1 1/2 tsp brown sugar
1 1/2 tbsp cornstarch
Heat oil in wok and cook chicken, then dice chicken once it's cooked. Mix sauce mixture in a seperate bowl and whisk until smooth. Add all ingredients (sauce mixture, veggies, and xooked chicken) to wok and cook on higher heat until sauce mixture bubbles and becomes thick, then reduce heat and cook until broccoli is tender. Enjoy- serves 4.
2. Tamari Chicken
This is a very simple dish that has my two favorite spices (tarragon and cumin) and of course it has health boosting garlic in it. Gotta have my garlic. For those of you who don't know a quick simple fact about garlic: it's healthiest when cooked thoroughly.
2 cups steamed brown rice (I use instant if I'm in a hurry)
2 Chicken breasts
2 cloves diced garlic
1 diced shallot
2 tbsp red pimentos
1/3rd tsp salt
1/3rd tsp pepper
1/2 tsp cumin
1/2 tsp tarragon
3/4 cup peas (if using frozen, defrost in a bowl with added water, then microwave 1+ mintue)
1/4 cup organic tamari soy sauce (you can use less or more- as preferred for taste)
Steam rice, cook chicken in wok with oil on medium heat. When chicken is cooked, dice and add back to wok with garlic, shallot, pimentos, and spices. Lower heat and add in cooked rice and peas. Stir gently and mix evenly for only a minut or two, then sprinkle with tamari sauce- preferred to taste, and serve. Enjoy- serves 4.
